Say “Cheese”!!! New Cheeses and More

In a world of synthetic food, we believe that the best doesn’t originate from a lab, but rather, when we remove the extra links between the farmer and the end product, we have simpler foods that are more nutritious, less allergenic, and quite tasty.

We do not use GMO’s, artificial dyes, growth hormones, vaccines, hormone-modifying ingredients (like soy), cheap fillers, artificial preservatives, or lab-grown ingredients… just simple food like what people have eaten for thousands of years.

Using this approach to feed our families, we have been extending our pastured raw milk and eggs to you for the last (almost) six months. We’re excited to add a few new products!

Now you can get farm-fresh, A2A2 cheese from your local farmers! Experience the difference of cheese made the way it used to be. Our cheese isn't just "produced"—it’s hand-crafted with intention using 100% raw A2A2 milk from our pastured cows!

And not just one variety - we have two kinds of cheese!

But before we dive into the specific cheeses that we are now offering - what makes our cheese special?

1) Cheese is made from milk from our pastured cows - not their poor confined cousins. Our cows thrive in fresh air and have plenty of room to kick up their heels and “be cows” in our pasture!

2) The milk that we use to make the cheese is raw and unprocessed - including enzymes, nutrients, probiotics, vitamins, and much more - just like our forefathers enjoyed! The chart below from the Raw Milk Institute details the differences between raw milk and other “milks”.

3) Our cheeses are generally heated to around 100 degrees to preserve the nutritional profile of the cheeses, much lower than the 161 degrees for 15 second standard for commercial pasteurized milk.

4) Since our milk is A2A2 as well as raw, you may be able to drink it without issue even if you currently are not able to drink commercial milk. This directly translates into our cheeses!

5) Simple ingredients with purpose: Our cheeses have only 3-4 ingredients.

6) We use non-GMO rennet from animals. Standard industry practice (in the vast majority of cheeses) is to use GMO’d rennet, dubbed: “vegetarian rennet”, “culture”, and/or “enzymes”. It was developed by Pfizer as the first genetically modified ingredient to go into our food system. It was passed by the FDA without a fuss before people generally realized the dangers of GMO’s. It does not have to be labeled as a GMO - and can be used in “organic” cheeses! Check out the podcast below to learn more.

We don’t support everything from this podcast, but it is interesting to learn more about how artisanal cheese is made around the world. As you saw from our previous email, we prioritize cleanliness and sanitation in our milking process.

Podcast: Traditional vs Industrial Cheese

What kind of cheeses are we offering right now?

First, we are offering a traditional fresh mozzarella. This is one of the most basic and popular cheeses in America. It is perfect to add to your lasagna, breakfast casserole, hamburger, sandwich, etc. Mozzarella is well known for its stretchiness - and ours is no exception.

Because mozzarella is a fresh cheese with a limited shelf life, we have a very limited supply. If interested in getting mozzarella regularly, add it to your subscription as we generally won’t make much more than what the subscriptions are calling for. Tuesday is generally when we make mozzarella, so for optimal freshness, set your subscription or place your orders to pick up Wed-Fri.

Our other cheese to add to the mix is more unique. It is a premium grilling cheese* which is excellent fried in your cast iron skillet or grilled, due to its high melting point. We make our grilling cheese from fresh milk and then freeze it to preserve freshness.

This savory cheese is like eating a grilled cheese sandwich - without the bread! Fry it in a little raw butter in your cast iron skillet, and you have a lunch fit for a king!

*This cheese is a variation of a traditional cheese from Cyprus called Halloumi. The name of that cheese is copyrighted by the Republic of Cyprus, so we are not at liberty to use it, so we refer to this cheese as "grilling cheese".
